I point your domain at a real IMAP mailbox (not Gmail forwarding) and turn on MX, SPF, DKIM, and DMARC so Outlook and Apple Mail can sign in.

DEFAULT HOST

Prosu (prosu.org): IMAP/SMTP, EU hosting. You create the Prosu account. Pro is 60 USD/year billed on Prosu, not in this gig (same as paying Google for Workspace). This gig is DNS + mailbox setup + client check.

WHAT YOU GET

Records to paste (or I apply them if you give DNS login), one mailbox tested send/receive, a short client setup note.

NOT INCLUDED

Google Workspace purchase, migrating 10 years of Gmail (ask first), or using the shared node for bulk cold email. Dedicated IP is Premium: 200 USD onboarding in this gig; 49 USD/month on Prosu.
