Will the signature show on mobile?
It depends on your content of the signature. If it crosses the certain limit of width then the signature will not be compatible with the small devices. So, If you want to show the signature in the small devices, you have to use very minimum content.

Each Email application has its own rendering engine, which determines how emails are displayed.I don't have 100% control over the signature.
